Mushroom Risotto (Risotto ai Funghi)

Rice released of its starch one ladle of stock at a time, finished with sauteed mushrooms and Parmesan -- patience is the only hard part.

Ingredients

  • 1.2 l vegetable stock, kept warm
  • 2 tbsp olive oil
  • 250 g mushrooms, sliced
  • 1 onion, finely diced
  • 300 g arborio rice
  • 120 ml dry white wine
  • 50 g butter
  • 60 g Parmesan, grated, plus extra to serve
  • salt and pepper to taste

To finish

  • fresh parsley, chopped

Instructions

    Adding stock gradually and stirring often is what coaxes the starch out of the rice -- dump it all in at once and you get boiled rice, not risotto.

Notes

  • Risotto does not wait -- have your other courses ready before you start stirring.
  • Leftover risotto makes excellent fried arancini the next day.
