Kala Bhuna
Beef slow-cooked in mustard oil and spices until deeply dark and glossy.
Chittagong's signature beef bhuna, cooked low and slow in caramelized onions and mustard oil with no added water, until the meat turns a deep blackish-brown and the oil separates out glossy at the edges.
Ingredients
For the meat
- 1 kg beef, bone-in, cut into chunks
- 2 tbsp raw papaya paste, optional, traditional tenderizer
- 2 tbsp ginger paste
- 2 tbsp garlic paste
- 1 tsp turmeric
- salt to taste
For the base
- 150 ml mustard oil, or vegetable oil
- 4 large onions, very finely sliced
- 6 green chilies, slit
- 2 bay leaves
- 1 cinnamon stick
- 4 green cardamom pods
- 4 cloves
- 1 tbsp red chili powder
- 1 tbsp coriander powder
- 1 tsp cumin powder
For the bhuna masala (dry-roasted and ground)
- 1 tbsp cumin seeds
- 1 tbsp coriander seeds
- 1 tsp black peppercorns
- 2 dried red chilies
- 1 cinnamon stick
- 3 green cardamom pods
- 3 cloves
To finish
- crispy fried onions
- 2 green chilies, slit

Papaya paste is the traditional tenderizer for the tougher, bone-in cuts bhuna is built on -- plain yogurt works if you can't find it.

Toasting the spices before grinding is what gives bhuna masala its deep, almost smoky aroma -- do not skip this even though the beef still has hours left to cook.

This is the defining trait of bhuna cooking -- no added water. The dish simmers in its own released juices and rendered fat, which is what concentrates the flavor and eventually turns the beef dark.

This final dry-roasting stage is what "kala" (black) refers to -- the color comes from slow caramelization, not from burning, so keep the heat moderate and stir often.
Notes
- Traditionally made with beef leg or shank on the bone -- the collagen is part of what makes the sauce glossy and rich after hours of slow cooking.
- Kala bhuna keeps and even improves for a day or two refrigerated; the flavor deepens as it sits.
