Chickpeas blended with tahini, lemon, and garlic until silky -- better than store-bought and ready faster than a trip to buy it.

Ingredients

  • 400 g chickpeas, drained, liquid reserved
  • 60 g tahini
  • 2 tbsp lemon juice
  • 1 clove garlic
  • 2 tbsp olive oil, plus extra to serve
  • 1/2 tsp ground cumin
  • 1/2 tsp salt

To finish

  • paprika, to serve
  • fresh parsley, chopped

Instructions

  2. The starchy liquid from the can is what gives hummus its light, whipped texture -- plain water works too, but not as well.

Notes

  • Keeps 4 days refrigerated in a sealed container.
  • Flavor improves if it sits at room temperature for an hour before serving.
