French Omelette (Omelette au Fromage)

Eggs cooked hot and fast while constantly stirred into tiny curds, then rolled into a pale, seamless oval around melted cheese -- the real French technique, which is nothing like the slow, folded-in-half diner omelette it gets confused with.

Ingredients

  • 3 eggs
  • 1 tbsp cold water
  • pinch of salt and pepper
  • 1 1/2 tbsp butter, divided
  • 40 g gruyere or cheddar, grated

  • chopped chives, optional

Instructions

  1. A French omelette is cooked hot and fast, the opposite of the low-and-slow diner method -- the whole cook takes well under a minute once the eggs hit the pan.

  2. Constant motion is what keeps the curds small and the texture creamy -- if the eggs sit still for even a few seconds over this much heat, they'll brown on the bottom before the top sets.

  3. A French omelette is rolled into a smooth oval, not folded flat in half -- the shape and the pale, unbrowned exterior are what identify it as done correctly.

Notes

  • No color is the goal -- if the outside has browned, the heat was too low and too slow, not too high.
  • Swap the cheese for any melty variety, or add finely chopped herbs to the eggs before cooking.
  • Three eggs makes a substantial single serving -- halve it for a lighter breakfast.
